Raw Sweet Potato Soup

1 medium sized sweet potato peeled and cubed32 ounces of freshly prepared carrot juice 4 pitted dates 1 avocado (that has been scooped out) ¼ teaspoon of pumpkin pie spice (or to taste)You can add some chopped chives or spring onions on top

Blend all ingredients in a blender until they are smooth (yields four or five cups).

Raw Spaghetti

Cut 2 medium sized zucchinis (the fatter and straighter the better) with a spiral slicer (or shredded though spirals are more believable) and arrange on a plate as pasta would be arranged.

Pasta Sauce

10-12 sundried tomatoes that have been allowed to soften in warm water for several minutes.1 fresh tomato (large)1 red pepper (large)1 celery stalk1 garlic cloveFresh basil leaves (to taste)If you have fresh oregano, this adds an awesome extra flavor as well

Place all ingredients, with the exception of the sundried tomatoes, into the blender and blend adding a couple of the sundried tomatoes at a time then pour over the zucchini.

  1. Hi Yulia and Paul! I really enjoy your voides. I am 20 years old, and I really want to try to switch to a raw vegan diet. I worry about getting enough variety of fruit where I live at an affordable price. I love fruit so much. I know I can live on it, and I really want to have the best health as possible. I am currently eating a gluten free cooked vegan diet, but I want to go the extra step. Also, I think I’m eating too much fat in my diet. How long did it take you all to get the hang of eating low fat raw vegan?
